If you’ve never made your own cranberry sauce I just hafta ask… “what are you waiting for?” Perhaps it’s a recipe like this one, using only 4 ingredients, and made in 15 minutes! Ready… let’s go!
It really is as easy as measuring the (few) ingredients, juicing and zesting an orange, then a few minutes on the stove. That’s it! Face it, most of us love cranberries with a roasted holiday bird, and if you go to the trouble of roasting a turkey, goose, chicken or turducken… why not take the few minutes to make your own not-too-sweet, small batch, artisanal… yes, you get the gist here… Zesty Orange Cranberry Sauce!
Did you know…
… the season for fresh cranberries is very, very short. They’re on the shelves right now, so buy extra and pop them in the freezer. Their tartness is wonderful for use in other desserts like cranberry biscuit cinnamon buns and apple cranberry phyllo bites! Tossing a handful into any apple or fruit crisp is also a good thing~
Cranberries. Need. Sugar.
OK, it may look like a lot of sugar, but…half is brown sugar, and, I should mention that it’s a double batch in the pics! Besides, it is necessary to temper the bitter cranberries. Yes, much like olives they are not good to bite into before something is done to them – so don’t do it! I speak from experience on this… with the cranberry that is, not with the olive, and it was back in my serious cosmopolitan making days. Trust me, they’re nothing without heat (or dehydration) & sugar!
What’s in a cranberry, anyway….
What started out as wild berry is now cultivated and the health benefits are many. They’re a very good source of Vitamin C, have dietary fiber, vitamins and minerals and if that’s not enough, they have antioxidant, anti-inflammatory, and anti-cancer health benefits. Are you convinced yet…?
For loads more info check out Ocean Spray.
Cranberries are also full of natural pectin. Cooked only until they ‘pop’ the thickening really is miraculous, as in the photos shown above. (ps There is nothing added to thicken the sauce!)
One last thing…
If you’re wondering why I made a double batch, it’s not that I’m expecting a massive crowd for dinner, or need it for days of leftover turkey sandwiches (although that would be nice!)… but to have extra to make these wonderful Easy Cranberry Oat Bars. And, I hope to make them as vegan & gluten free (stayed tuned for that post!)
As always, thanks for reading. Wishing you buon appetito at your table~
