Watermelon & Feta Salad

This fresh and pert summer salad is bound to become a regular in your kitchen. If for some reason you’re not into sweet & salty, I venture to say… “get over it!” This is just the thing to help change your mind~

Taking advantage of summer’s fresh bounty is not only good eating – it’s smart eating. It makes your work in the kitchen so much easier when you start with the freshest possible ingredients. It also increases your chances of success.

You’ll notice there’s no salt in the ingredient list – the saltiness of the feta is more than enough for this recipe.

The tang of the cheese plays off perfectly with the sweetness of the melon. As when serving most cheese, it’s best at room temperature, and so offers another contrast to the cold, crisp melon. This is best put together just before serving, although the feta mixture benefits from a little time marinating.

I’ve yet to serve this to someone who did not fall in love with it. In fact, those that thought they wouldn’t really enjoy it, turned out to be it’s biggest fans.

This is so delicious you’ll want to serve it at every mealtime. Go for it!! Quantities can be easily multiplied to serve larger numbers.


Watermelon & Feta Salad

Don’t skimp on the fresh herbs and be sure to use a very good extra virgin olive oil. It’s flavour will be very pronounced on this light & most refreshing salad. Serves 5 as a fantastic starter to any summer meal.
5 pc watermelon, cut into approx 3 x 5 triangles
3 oz feta cheese
1 Tbsp extra virgin olive oil, plus more for final drizzle
1 tsp minced fresh rosemary
1 tsp fresh basil, cut or torn into chiffonade/thin strips
freshly ground black pepper
Cut the watermelon into triangles and set aside.
In a small bowl, crumble the feta cheese, olive oil, fresh
herbs and a couple grindings of black pepper, then stir to combine.
On a serving platter, arrange the watermelon triangles
and top with the feta cheese mixture. Drizzle with a bit more olive oil and another grinding of
freshly ground pepper.
