If you cook anything Italian at home, and I do mean any pasta, pizza, calzone, gnocchi, lasagna… you should be making this incredibly tasty sauce from Marcella Hazan!
More than the sum of its parts.
With only 3 ingredients to make the sauce, nothing could be simpler! After putting them on to simmer, there’s nothing to do but stir occasionally. We all need more recipes like this! To really save on time, put this on the stove while cooking dinner, and then have it in the fridge, ready to go for the next night… or nights!
Start with good things!
With such few ingredients, you need to start with good ones. Using proper Italian Roma tomatoes is a given. Meatier, and with fewer seeds, they’re the go-to for any and all tomato sauces!
The right tool for the job.
Save on time and clean up, by using kitchen shears to cut the tomatoes! No it’s not a crazy idea. In Italy they use them to cut slices of pizza to portar via/take away! Just think about how smart that is… it’s quick, there’s no mess to clean up and no cutting board is needed. Just brilliant~
This sauce has the purest, sweetest tomato taste of any tomato sauce you’ll ever make! In Marcella’s book Essentials of Classic Italian Cooking she mentions knowing people who will skip the pasta, and eat the sauce on its own – right out of the pot. I can vouch for that! It’s buonissimo~
Tomato Sauce with Onion & Butter
- 2 cups canned imported Italian plum tomatoes cut up, with their juice
- 5 tablespoons butter
- 1 medium onion peeled and cut in half
- salt, to taste go easy to start, as the sauce will reduce
Put the tomatoes in a medium saucepan. Add the butter, onion & salt, and cook uncovered at a very slow but steady simmer for 45 minutes. Stir occasionally.
Taste and adjust seasoning for salt. Discard the onion before using.
This can also be made with fresh, ripe tomatoes - by blanching them first to remove the skins.
A 28 oz can should give you 2 cups of tomatoes. Save the juice for use in soup or stew.
