Texas Barbecue Sauce

No bbq…? No grill…? No problem. Enjoy the quintessential taste of summer using your stovetop or oven, with this easy & delicious recipe from Bon Appetit.

This is wickedly simple to put together, and you probably have all the ingredients in your kitchen pantry.

You can really taste how ‘fresh’ it is!!

The taste…? Yet again, it’s one of those recipes where the total is oh-so-much-more than the sum of it’s humble parts. Make this once, make it your own. Sweeter? Spicer? Hotter-than-hot is your preference… no probs. This is so freakin’ good…. I wanted to put it on everything!! You’ll never go for store bought again~

Texas BBQ Sauce

Texans take their barbecue – and their barbecue sauce – seriously. I know this from experience, having spent some time in Texas, years ago. This is a classic central Texas-style sauce, a tomato-based mixture, a little sweet, a little spicy. The chipotle chiles really make this sing & zing. Do be sure to find them.

1 tablespoon butter
1 garlic clove, minced
1 cup ketchup
1/3 cup (packed) golden brown sugar
1/3 cup Worcestershire sauce
1/4 cup fresh lemon juice
*1 chipotle chile from canned chipotle chiles in adobo, minced with seeds
1/4 teaspoon ground cayenne

*Dried, smoked jalapeños in a spicy tomato sauce called adobo; available at some supermarkets and at Latin markets.

Melt butter in medium saucepan over medium heat; add garlic and stir for 30 seconds.
Add ketchup and all remaining ingredients, then bring to a boil.
Reduce heat to medium-low and simmer until reduced to 1 1/3 cups, stirring occasionally, about 15 minutes.
Season with salt and pepper.
Cool slightly, cover, and chill.

Stored in a glass container in the fridge, the chipotles will last indefinitely.
