Making Gluten Free Maple Walnut Righteous Granola is a breeze, and is so much better for you than store-bought.
I’ve made my own granola for years, and have always thought of it as righteous! Still using extra virgin olive oil, it’s been updated to use Gluten Free whole oats, with my preferred oats being from Bob’s Red Mill. Consistent in quality and now easier to find, they also make a gluten free oat flour. Handy to have, and I no longer have to whirl up the oats, to make my own gf oat flour for baking.
If you’ve never made your own granola, you’ll be pleasantly surprised by the easy, one bowl method. In the time it takes your oven to heat, you can have the mix ready.
If you can eat them, I highly recommend adding the walnuts. I’ve made granola both with and without, and the amount of flavour that’s added really is remarkable, not to mention the added nutritional boost!
I always use a good, fruity extra virgin olive oil, liking that I’m not only using one of the best-for-you oils there is, but also adding taste.
To sweeten I prefer the combo of (real) maple syrup and a bit of brown sugar.
As for the use of oil I use a light hand. The granola does not clump together which actually makes it easier to chew, while being healthier. The maple syrup & sugar combo gives it just the right amount of sweetness, so nothing extra is needed to serve. If you find it a little sweet to your taste, cut back on the brown sugar, not the maple syrup.

- 4 cups Bob’s Red Mill gluten free rolled oats
- 1/4 cup flaxseed meal
- 1/3 cup chopped walnuts
- 1/2 cup extra virgin olive oil
- 1/3 cup quality maple syrup
- 1/4 cup brown sugar
- 2 tablespoons packed brown sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon Kosher salt
- Preheat oven to 350°F
- Combine all ingredients in large bowl, mixing well.
- Scrape out onto parchment lined 9x12” baking sheet, and bake for 25 - 30 until a deep golden brown stirring at least once - especially at the corners where it tends to get darker first.
- Cool and store in airtight container.
- To serve top with fresh berries, sliced fruit, dried fruit, milk, yogurt, etc.
