Absolutely, with this easy dish featuring fresh asparagus and eggs! Remember, green = good, and even if you cook for just one, eating fresh and well is possible.

Who needs bread, when you can use a healthy, green veg in its place! Steam, pan-fry or broil asparagus for a few minutes – until tender crisp, or done to your liking.

Initially planning to poach the eggs, I felt a craving for olive oil fried – with yummy, crispy edges. However you cook yours, do keep the yolks soft, for nature’s perfect, natural sauce. Unless of course you cringe at the thought, cook them the way you like them. That’s the joy of cooking for yourself!

Now for the bacon. Everybody loves it and although it’s used here in moderation, it’s salty essence really comes through. Especially if you’re not a big meat-eater, using it as an accent rather than a main ingredient, gives you the best of both worlds. Chopped pancetta would also be heavenly!

Ingredients

  • 2 - 3 asparagus spears per person
  • 1 - 2 bacon slices (or diced pancetta) per person
  • 1 - 2 eggs per person
  • pinch salt & freshly ground pepper
  • 2 - 3 tablespoons chopped fresh tomato

Instructions

  1. Trim the asparagus ends and cook using your fave method to tender crisp.

  2. Cut the bacon into 1" pieces and fry until crispy. Drain on paper towels.


  3. Fry or poach the eggs to your liking - leaving the yolks soft is nice. 

  4. Place the asparagus on a plate/platter, top with eggs, and sprinkle the bacon & tomato over, season with salt & pepper.
